First of all, it would be nice to revise some schools which have always been regarded as unbalanced, wether over or underpowered. Desaix and Bernouilli come to mind *.
Also, there are a few nagging questions regarding riposte, stop-thrust and the like which keep popping up, to Thwak's perpetual joy . A FAQ section could work. Stats for Veronica Ambrogia are a MUST, and updated stats for other previous swordsmen (Luis Rafael Dominguez, Remy du Montaigne, etc) would be nice too.
Describing a few Fencing Academies would also be quite interesting; a lot of masters have been fleshed out, but none of the locales.
I don't know if Mark is accepting writers or work, but if he is, I'd love to participate.
* Not trying to beat a dead horse here folks, just pointing out a popular issue with some schools. You may of course think otherwise.

Off the top of my head, I'd imagine that Desaix shouldn't be covered in a non-R&C text, even though I agree that it should be updated at some point.

Though I definitely agree with you on this, I think this should rather be done as an errata or other update rather than a part of the SGII.
The update of important swordsmen from older books strike me as being just as important, and perhaps more in style with the theme of the book.
Though it could be a place for new schools, I'm not sure it should be (or indeed will be) as there are relatively few niches for schools suitable for the guild that haven't been filled already with official schools. I think if we want new Schools, "REV's School index" would probably be more realistic.

There are more than enough new schools. If anything, an E-book should consider finding a few cream of the crop unofficial styles and making them official as well as redefining a few published schools that have not been official until now.
Better still, the hell with the unofficial/official status, build the e-book with a list of ALL the schools so it's in one easy to find spot and save everyone the hassle of digging through all the sourcebooks.
The rest should be on Guild history, members on the fringe of influence toward the inner circle, likely replacements, better definitions of duelling in light of the "may not fight another member" rules, and local chapterhouse details that a GM can use to create adventures for a character that is an active member.
We have plenty of schools.

Is the Guild really old enough to have a chapter devoted to its history? I'd be more interested in what's happening now.

You know, I love creating schools more than anything, but the Man With The Red Text does have a point. We have such a number of schools that maybe it would be best to limit the mechanical endeavors of the sourcebook to correcting mistakes, answering FAQ's and the like. There is still a lot of background information regarding the Guils that we don't know of, like chapterhouses, other prominent members (mumble...VERONICA...mumble), re statting of old fencers, putting some document props (like your Guild Membership Papers or Fencing Academy Aproval)...there's plenty of great stuff which I think bests more Swordsman Schools.
As a matter of fact, I think I need to stop creating ones myself. It's becoming an addiction...

New schools, or newly sanctioned schools or schools lost due to OOP startus of a book would be a great 1/week post up on the webpage. No need for PDFs, just a text writeup on the ol' html part of the web.
I would like to see a alphabetical official school list (sanct. & unSanct.) up on the web the first week. Then each week have one school on the list put up on the web, non pdf, linked right there.
As that is happening, all the schools can be updated or fixed if need be and those that are oop could be available. sure we'll all need to wait to get a fix on somethings, but its a great week-to-week "keeping it alive" thing.
THEN
During all of this, I would like to see a completely new school to be added to this list say once a month. it would need a story, not be a rip off of the other schools and it's mechanics sound.
This quality is possible, especially if ...let's say three rules-guys... give it the "approval". Sidhe-shadow, thwak and barna are all good choices for this duty. (not to put you three on the spot, but you guys know schools a lot better then some, and inifinitly more then the short list of people who know nothing about rules design.)
this cold even be a monthly contest or subject of a poll if you wanted to share the responsibility of bringing new material with its fans. i know past bm's adamently believed and personally vocalized that belief to me that the fans should be kept as far away as possible from development. it does not sound like mark is at all of this school of thought.
