IIRC, the idea behind Riposte is that your weapon quickly taps away your opponent's weapon, then, using the weapon as a guide, slides down that weapon to attack your opponent. Given that, (coupled with the fact that Aldana which only uses one weapon has Riposte) I would say that you can only use one weapon and that Attack (that weapon) has to be your attack.
On the other hand, ideally you want to keep a saved action so that you can use riposte without having to use an interrupt (wasting two actions), see the above mentioned Aldana school for a better description. That being said, you can use an interrupt to use riposte.

THAT sounds more like Stop-Thrust's description in the Vodacce book (page97).

Yes, I don't see why not. It's a Riposte, not Stop-Thrust, as I mentioned above. It says to use your Attack Knack, but it's not specific as to what Attack Knack and says nothign about the same weapon, unlike Stop-Thrust.
Can you substitute another Fencing attack knack for Attack (Fencing) for the attack half of the Riposte, i.e. using Pommel Strike instead of Attack (Fencing)?
Yes. Once again it says nothign about the nature of the attack itself. When the book says use the "Attack Knack" one has to remember that that other attack simply "Use this knack instead of the Attack one". Think of this as those mo9ves you see in the movies when one guy quickly blocks and then gets a elbow into the face of his opponent that just barely hits, type of thing.
Can you Riposte using an interrupt action, considering that Riposte starts with a parry?
Yes. You can use an Interrupt Action.
SIDE NOTE:
Personally, I think the fact that Riposte and Stop-Thrust are two different types of actions is kind of stupid. They essentially do the same thing both in spirit (they are offensive in nature, not defensive) and in base mechanics (parry and then attack). But as the game has seperated them, thus it stands.

I? not sure that you could parry with one weapon and attack with another weapon. The book sais that you use parry(fencing) and attack (fencing). Personally I think that it? a high speed maneuver, so use two weapons would be nearly impossible. But that? my opinion

Well, as a fencer, I think that Riposte and Stop-Thrust are very different, in essence and technics. With riposte, you try to deflect your opponent? attack with a movement that allows you to quickly attack your opponent in the same maneuver. With stop-thrust, you use your opponent? blade as a guide for your own, hoping that you make him enough damage to retreat, finishing his attacking movement.

A minor problem with the R&K Fencing mechanics is that is mixes maneuvers with different levels of abstraction. Feint is quite generic when it comes to actual fencing, while Stop-Thrust is very specific. It? a minor point, but it? still there.

Bring up an old thread instead of starting a new one.
I'm working on this weekends adventure and had a great idea. Riposte with the attack half as a tag. Will that work, rules-wise?
